Shelf-stable pickles are pasteurised, and pasteurisation is heat, and heat is what destroys crunch. That's the entire explanation for why supermarket-aisle jars are soft and why refrigerated fresh-pack pickles cost more and taste dramatically better — the trade between shelf life and texture was made at the factory, long before you chose a jar. It also explains the shelf placement: the fresh-pack version lives in the refrigerator case next to the hummus, not in the aisle with the vinegar.

Grillo's is the accessible version of that category: simple brine, no long preservative list, and a texture that makes the price difference obvious on the first bite. In sandwiches and on burgers — the two jobs a pickle actually has — the structural difference matters more than any flavour nuance, because a soft pickle disappears into the bread and a crisp one announces itself.

The costs are the category's: refrigerated shelf life is measured in weeks rather than years once opened, the price sits above jar pickles, and the larger tubs occupy real estate in a fridge that probably doesn't have it. Buy the size your household will actually finish rather than the one with the better unit price.

A small product to review, but the principle generalises — in several supermarket categories, the refrigerated version is a different food rather than a premium version of the same one. Pickles are the clearest example, which is why it's here. Once you've tasted the difference, the aisle jar gets demoted to a cooking ingredient — a demotion it earns.
